Cashew Cream

If you haven’t tried cashew cream before you are soooo missing out! It’s raw, vegan and it goes together in under 3 minutes.  If the raw, vegan part scares you, let me replace that with my kids beg for it and eat it by the spoonful straight from the blender!

We make it often at casa Neuner.  Partially because everyone in my house loves it and partially because they can make it on their own.

We most often use it to top fresh fruit as a snack or dessert or even breakfast,  but it can be used as a replacement for whipped cream wherever you would use it.

I started making cashew cream as a dessert replacement.  Our kids ask for dessert on an almost nightly basis and it’s a struggle for sure.  I don’t want them to think that any food is bad (because kids often internalize that as that they are “bad” for eating “bad” food) and I don’t want them to never have treats, so it’s a balancing act for sure.  

We all had that friend growing up (or maybe you were that friend) who’s parents never let them have any junk food and so at every birthday party they were literally shoveling in any sugary treat that they could get their hands on as fast as they possibly could.  I don’t want my kids to be that kid and it’s a struggle fo sho.  

Deserts/treats/junk food, whatever you call it is a balancing act with a very fine line.  In our house we really try hard to normalize all foods and explain to them what healthy eating truly means. That eating is about fueling our bodies and brains not about a holiday or a reward. We also talk to them about the chemicals in our foods and that many of the foods we don’t eat or eat very little of is because of the chemicals, not the food itself.

In our house you can eat unlimited fruits and veggies and I’m ok with that.  The daily struggle is still with the idea of desserts/treats/junk food and that’s where the cashew cream comes in.  In reality, it’s nuts and a little sweetener on top of fresh fruit.  The kids think it’s a “treat” and I’m thrilled – a win-win if you ask me.

So go cut up some fruit, blend away and introduce a new “treat” to your kids!  I promise you won’t be sorry!

Cashew Cream

Ingredients
  1. 2 cups raw cashews
  2. ½ cup water (possibly a bit more to desired texture)
  3. ¼ cup agave
  4. 1 whole vanilla bean (or 1 tbsp vanilla)
Instructions
  1. 1. Soak cashews overnight (in a bowl with about an inch of water covering the nuts)
  2. 2. Drain and rinse cashews
  3. 3. Place all ingredients in a high speed blender and enjoy
